This guy is the bestest ever beast tamer who can control an army of fluff and tame the ultimate life form… but won’t even try to use his greatest strength to form a temporary contract in an emergency and instead charges at the offending creature with a butter knife? “No monsters to tame?” How about that giant striped cat right in front of you? No, he’s going to close his eyes and give up his life without even attempting to control it. They could’ve had him try and say “it’s too bloodthirsty to listen” or something, or had it be a rock elemental or other non-beast. That ridiculousness ruined this first episode for me.

His remark about no monsters to tame could be a mistranslation? If it isn't, then it really doesn't make any sense.

Or in the RPG terms, it needs to be green/neutral to tame, being red/agro doesn't work.

Or he just doubts his abillities

Perhaps there is some sort of benefit to the taming contract like non-verbal communication or understanding, or maybe there’s security in it such as some sort of magical shield from other tamers or other controlling magic. No idea, but if there’s no reason like that you’re right about it being pointless. Hopefully at the bare minimum it’s more of a partnership type of deal rather than subservience, which is what it felt like since both their symbols are on their hands which they then shook. So I don’t think we’ll be dealing with more slave nonsense at least.
