For some reason I don't like the genre but I found people love it. Thus asking for recommendations. Something that can show me why this genre is so popular.

Since you just finished SAO some time ago, lets ease you back into isekai.

Log Horizon - another video game isekai but the players now have to live in the game world and deal with the world's game mechanics; Note: the anime is akin to the city building genre

Grimgar: Ashes and Illusions - fantasy isekai with a group of teen adventurers in a more realistic take on the genre; the group quickly discover that the world they're in is dangerous and unforgiving, their character growth comes at a natural pace; Unfortunately, the anime only has 1 season

El Hazard: The Magnificent World - an isekai classic, 2 students and a teacher get thrown into a high-fantasy world on opposing sides of a war

The Vision of Escaflowne - another isekai classic, a girl gets transported to a warring fantasy world where they fight using magic/gear-punk style mechs; she and her allies strive to fight back against an ever encroaching empire

The Twelve Kingdoms - a high school girl gets transported into an alternate magic version of China; she must learn how to operate in this new world in order to survive; Note: the story deals more with psychology and politics than action

Overlord - Now lets flip the script a bit. Overlord's main character is the villain of his isekai game world. His goal is pretty much the same as any other conqueror or warlord. Expand, rule and protect your own.

KonoSuba - KonoSuba is a parody/satire on the whole fantasy-isekai genre. It pokes fun at many common isekai tropes and is very amusing.

Surprised no-one has mentioned Now and Then Here and There - it’s the only one of the genre I’ve seen, from what I remember, and despite not being into fantasy, I loved it. If you liked the tone and themes of Grave of the Fireflies, you’d probably like Now and Then, although the latter is a tad more optimistic!

The reason I think the fantasy works is like I said in another thread:
It uses the fantasy setting to good effect, juxtaposing the protagonist’s life in his own world with the horrific lives of the inhabitants of the apocalyptic parallel world in a way which lets us see clearly how his values are tested and character developed, without it just becoming a miserable exhibition of suffering. It feels like it has something to say about agency and cooperation, and it doesn’t shy away from depicting quite brutally the tragedies that the protagonist is motivated to resolve.

Youjo Senki aka The Saga of Tanya the Evil is my favorite anime of all time and I hate isekai animes. Honestly I always forget it's even technically an isekai it's basically nothing like other isekai animes.

As what is suggested earlier, that time I got reincarnated as a slime is a good start, it has everything an isekai have but did it better.

If you want something lighter, you can try Grace by the god, I killed slime for 300 years and I max out my level and Kuma Kuma Kuma Bear.

I recommend Haibane Renmei, a reincarnation isekai redemption story. If you have watched Mushoku Tensei (I haven't), which I heard is also a reincarnation isekai redemption story, you might find some similarities. Nonetheless, let me caution you about some differences:

1. I heard Mushoku has quite a bit of ecchi and harem but Haibane Renmei, as far as I recall, doesn't have these. It focuses more on redemption.

2. Mushoku contains some travel adventure, but in Haibane Renmei the main characters are confined within a town, so there is less exploration (although the protagonist does enter a forest and a dungeon-like place in the second half of the series so you might still enjoy it if you like these things?).

Votes for Bookworm and Junni Kokuki ("The Twelve Kingdoms") The latter is pretty widely available these days on mainstream services like Amazon Prime, but usually only with the English dub. The subtitled version and the dub are on Crunchyroll as is Bookworm.

Seeing as it's technically an Isekai in the sense that the protagonist and several other characters are transported to another world. I'd recommend Drifters.

It's by the author of Hellsing, so you can expect all sorts of crazy and awesome stuff.

The genre is popular because it offers self-indulgent wish fulfilment, and is incredibly easy to produce. So, if you're thankfully not into that, you won't like the genre full stop. Anything that moves away from that cliché doesn't really represent what Isekai is and what most people like about it.

I'd advise you to go for some older works, from before it became plagued by low-effort Light Novel adaptations. So, Rayearth, El-Hazard and Escaflowne.
Well I for one already loved Lain.
