Yea it gets darker in the next arcs around ep. 40+. Just watch it and you'll see. But even in the first arc it is already different than most shounens only the first 6,7 ep seem really childish.

Asking that without wanting spoilers is really contradiction, but as already said, you'll find out why in the later arc, it becomes very apparent as to why it's 17+
As for your questions:
-Yes there are dark plots.
-Yes there is blood.

Define "Mature."

This show is mature pretty much throughout it's entirety, but ironically, most children don't consider it mature until a lot of blood and death starts appearing on screen.

Does it get darker? Yes, at times. Does it get more mature? Hardly, though there are some parts in the latest ark that are a bit more poetic and thought provoking than previously.

Because it's much more mature than other battle shonen and it is also more violent, even though it looks childish. Without knowing HxH I would be surprised too.

Later on.. Well let's just say that heads will roll.
If I drive for you, you get your money. You tell me where we start, where we're going, where we're going afterwards. I give you five minutes when we get there. Anything happens in that five minutes and I'm yours. No matter what. Anything a minute on either side of that and you're on your own. I don't sit in while you're running it down. I don't carry a gun. I drive.

The gore really goes up another level in the Chimera ant arc. But even before then - I thought personally the first arc (Hunter exam) was fairly bloody and violent.

Well, the first 30 or so episodes are censored, but later gore will increase more and more (though manga is even more gory. The most violent shonen I've ever read!)

Chimera Ant Arc

There are other darker moments as well, but the Chimera Ant Arc gets pretty brutal.

Because it's darker and has more mature scenes (Hisoka pedoness, blood, violence, etc). That is the only reason.

Not if you ask Gon

I think hisoka and his personality toward gon is the main reason why it rated 17+, not to mention him making weird sound when thinking about gon lol

Like others have said, it gets darker, and downright nasty in the Chimera Ant arc. It gets pretty complex in terms of themes and characters later as well.

Hisoka is a pedophile, and he's not afraid of showing it. On the other hand, Gon is a gigolo.

It's totally an ero manga.

At first it was a child's series. I mean, look at the protagonists, from an appearance perspective. But they have interesting character backstories that aren't at all child-friendly. But children won't really notice them until they become so obvious. But visually, it is child aesthetics. But the story and the issues touched--hardly kiddy stuff. Just my observations, though.

Sex is implied in the anime version. Exactly on three occasions: Ep 44 (minor characters and someone pops for a surprise interrogation) and twice during the Chimera ant.
There's incest, but that's anime-exclusive. Also patricide.
Underage drinking.
There's blood, but the gore (brains popping out and the like) was toned down in the anime (not shown outright.. well aside from some as of yet unadapted manga material). Except in Ep.100, where the manga was censored and the anime was uncensored... and of course Kurapika's backstory.
Violent deaths.
Gambling references (the scenes were shorter in the anime but they're still there).
Liberal use of the middle finger.
And...
There's Hisoka.

As far as the themes go, for a lot of characters there's no such thing as morality, right or wrong; the death count gets a lot higher after Ep.39 and skyrockets during the Chimera Ants arc. Part of the story is inspired by North Korea

You see, there are lots of possible reasons for it getting an R rating.
It was shown on a time-slot for children but moved despite high ratings to a late-night slot: not that hard to figure out why :P

That was actually filler for the 99' version.
Which in turn removed a certain canonical bath scene...

Hunter x Hunter is alot like the Inuyasha series which is rated 13+. The actual story itself is not violent because of the little boys in the series.Remember not everything you read on the internet is true.

Well, to be honest, the depth of the story (as much as I want it to) is not applicable to this rating. It must all the pedo stuff (Hisoka) and all the extra gore.
