MUST BE RECENT. For college I'm taking digital animation classes and would like some stuff to watch and possible study material. What I'm looking for is something that has nice and really fluent movement. To give an idea some that I have seen are
Bakumatsu Kikansetsu Irohanihoheto
Densetsu no Yuusha no Densetsu (great blood effects)
Kara no kyoukai (Probably the best animation I have ever seen)
Sword of the Stranger (The last scene, fluent, really nice physics including snow drift)
Eureka 7 (explosions, background art is amazing)
Ghost in the Shell SAC. (realistic squad maneuvers and tactics)
Last Exile (ships well designed)
Fate/Zero (haven't seen except some clips)
Black Lagoon (good ballistics damage)
Tears to Tiara (the castle siege was well done imo)

Some things that i considered bad was really obvious CGI (Any Gonzo fuck up, especially Blassreiter, Somewhat Marcross Frontier) where is just stands out, feels kind boxy or rigid and very stiff movement. I'll even throw in Tower of Druaga during with its animation of Druaga. I also don't like non fluent motions such as the last couple episodes of claymore where they opt to do the DBZ blur effects for punches/swords and recycle the movement while panning the background.

If possible, have a decent plot

Defintely finish Fate/Zero, has some stunning animation, especially towards the end of the second series. You can also try Katanagatari. The animation is different, but I felt it was extremely well done. Another must see is Akira. While the art itself is somewhat old, the "frame rate" (can't think of the word right now) is incredible, and extremely fluid.

Another series that cannot be missed is Five Centimeters per Second. It has no action whatsoever, but the animation is just incredible. The best I've ever seen. Simply stunning. In my opinion it dwarfs even Kara no kyoukai. I really can't say enough about it. Without a doubt, it's probably the best overall anime I've seen in terms of emotion and animation.

You can also watch Spice and Wolf (download in HD if possible). While there really isn't much action, everything, especially the background and scenery is incredibly well done, and really is the benchmark for what I consider "great" animation.

Sora No Otoshimono - If you can stand some ecchiness and crude comedy, this series is a gem. Combine it with some eye candy for animation and fluent fight scenes, you have a solid series.

Sword Art Online - You really have to download this series to realize how good the animation really is. The only downside is that the fight scene may seem somewhat awkward at times, but it's still extremely well done.

In addition, generally any of the Miyazaki as well as the creator of 5cm/second's works have outstanding animation.

Seirei no Moribito has some fantastic fighting. It's not often, but it's fantastic.
Canaan - smooth animation, but some obvious CGI
5 Centimeters Per Second has some fantastic animation even though it's not an action anime. The backgrounds are CGI'd but stylized and gorgeous.

Anything by Studio Ghibli is wonderful - even their 80's films hold up very well to today's standards. Their two most recent are Ponyo and Borrwers Arriety.

For a classic film, Akira has superb animation. Only one scene had any CGI.

I thought freezing had some really good action scenes although the manga was 1000x better
Sword art online is a must.
despite the age I must say escaflowne had some remarkable fighting scenes one of the only animes that I legally watched.

Hunter x Hunter 2011 had some of those (there's a great fist fighting around ep.36), and definitely finish Fate/Zero.

Soul Eater tends to have some impressive animation for its action/fight sequences. Below is a clip from the first episode with one such scene about halfway in - you can check it out and see if it fits what you are looking for.

The fights in its manga are also impressive and easy to understand, so I second this one.

I'm no animation fanatic but I think Cowboy Bebop has the best animated action scenes of all time. The first five minutes of the "Pierrot le fou" episode had better action than all of "insert currently airing long running shounen here".

Id second Sword art online as well
also if you dont mind some ecchi/fan service maybe highschool of the dead
and for cool action scenes maybe afro samurai? although its only 5 episodes (and 1 movie) i still consider it the best action scenes ive seen

Action scenes... would Redline count?

You can always watch Mardock Scramble (first two movies out of three are out) but it has excessive dialogue, nudity, gore and sex I found the fighting scenes quite top notch for it's kind, one-sided, but still.

And for the hell of it, Full Metal Alchemist Brotherhood.

I'll second Soul Eater (anime) and Hunter x Hunter 2011. Though for HxH, you won't get any quality fighting til the end of the Heaven's Arena arc, which is like Ep 30+.

Neon Genesis: Evangelion. You mentioned you are looking for good graphics, so check out the Rebuild of Evangelion version. So far, there are 2 of those movies out, but they are epic.

I would also like to agree with your claim that Kara no Kyoukai is probably the best anime. Well, you said it was probably the best you've seen. Yeah, it's definitely in a tie with my other 2 favorites.

You also might want to try Karas. It's very visually appealing.
