Definitely ashita no joe. You about to have a memorable summer. That or Monster, or Natsume Yuujinchou.

I'd just start with something long and if you don't end up feeling like binging it you can always take a break for a day or two and watch some 1-cour show before you continue. You don't have to watch long shows all at once, but either way it can't hurt to get started with them early since they're, well, longer and might require more time to finish. Shorter stuff you can pretty much squeeze in at any point of your summer holidays. Idk how much you watch, but in my experience they can easily be finished in one or two days if you're free for most of the day.

You can also try to mix it up and start each day with a couple of eps from a long-runner and end them on a couple of eps of a shorter show. Basically just follow your mood is my advice. Strict planning doesn't really work, you need to listen to your daily moods and whims.
I probably regret this post by now.

You might be able to catch up on Detective Conan!

I'm kinda in the same boat as you.

I want to watch another World Masterpiece Theater show when I'm low on stress and have a lot of free time. Specifically, Ie Naki ko Remy. Romeo no Aoi Sora looks very appealling also. 3000 leagues in search of mother also looks very interesting.

I also want to start on an Ikuhara anime. Either Utena or Penguindrum. I haven't seen anything from him and they look interesting.

Then the serious shows that deal with philosophical topics like Texhnolyze,Lain, and Ergo Proxy.
