Hinamatsuri is a really funny manga, so I think the anime will be worth the watch! The only manga adaptation I’ve read in the past was Hinamatsuri, so I won’t be helpful with the others. However some originals seem pretty interesting to me! This season, I’m keeping an eye on Megalo Box (but if sports anime is not your thing, give it up) and Hisone to Maso-tan. The sequels look promising as well with Bnha s3, Tokyo Ghoul:re, Steins;Gate 0 and all of the other anime I haven’t tried yet, like Shokugeki no Soma s4, Fullmetal Panic!, etc.
