The mangas you have added to your reading plan (Good Morning Beethoven, Mozart wa Komoriuta wo Utawanai and Shin Petshop of Horrors) look interesting.

Aside from my personal love for classical music, Nodame is what I’d like to call a show that simply respects its audience. The precise description for that anime would be a very mature show. Unlike other series that share the same genre, Nodame doesn’t lean to melodrama and such things. It’s a straight-forward story that’s presented with so much care and dedication. The characters feel genuine and are extremely likable, the atmosphere is simply gripping, and the depth of this show is just incredible. No melodrama, no self-centered themes, and of course no more edgy characters. Nodame's very own existence is truly a blessing to its genre; a show that knows how to build itself brilliantly and a masterpiece imo.

By the way, I'd recommend reading One Outs manga since you already like the anime that much. Well, let's say that the manga exists in a whole another dimension if we compared it to the anime.

Saint Seiya Omega was just Toei trying to sell the franchise to a new generation, it failed. I would not recommend watching it.

Omega is very polarizing even among the most dedicated Saint Seiya fans. Some people hate it, some people think its alright.

Hi

It depends on how much you enjoy the series.

If you enjoy the series so far by the time you get to the Asgard Arc, you should watch it (it's not bad filler) but if you just want to watch what's considered cannon then you can just skip it and watch the Poseidon Arc no big loss there.
