I like to keep track of what I've watched/read.
I pretty much watch everything but moe/fanservice otaku-pandering crap. My guilty pleasure is anything that's reverse-harem (Fushigi Yuugi), otome, and fujoshi-pandering (Free!, Tiger & Bunny). No matter what it is, if the story is bland or stupid, I'll either watch the entire thing and hate it OR drop it immediately. I kinda have a low tolerance for slice-of-life anime, so I tend to drop those, too, unless they're like Usagi Drop. I also get really disappointed when a series/movie has wonderful, top-notch animation but a nonexistent plot (Karas, Redline), especially when it's boring enough to put me to sleep.
I enjoy dark, complex/mature stories like Urobuchi's works and slapstick comedies like Gintama (warning: you will alternate between crying tears of laughter and sadness in a matter of seconds). I also like anything with lots of action. I like love stories as long as they don't pull a Skip Beat (great, cute love story cut short). I don't watch as much shoujo anime as I used to, but I still do enjoy them from time to time. I like mecha anime as long as there is a good plot. Overall, I'm pretty big on story and character development.
I have a soft spot for '80s and '90s anime, since that's what I grew up on. So, while they may not hold up very well by today's standards, I'll still enjoy them for nostalgia.
