So, how much of the light novel has been adapted in these first 12 episodes?

Up to chapter 144 of the web novel, in the light novel it should be around the end of volume 3 iirc.

The anime skipped a lot of content, like Shun's childhood, most likely due to time restraints.

You don't absolutely need to if you watched the anime, but the previous volumes offer more detailed explanations about things like how the system and skills work, and stuff related to the kingdoms where the Human Side characters hail from. Also there are a lot more scenes related to Shun and his friends.

I would definitely read it from the beginning, or at least read all the human chapters

I would recommend you to at least read volume 1.
If you felt that the introduction of the human characters was abrupt that's because the anime skipped volume 1.
It during Shun's childhood were we see his first meeting with some of her former classmates.
It would also help the "Alaba been Kumoko's trauma" to click more. The anime skipped a scene with him inside the hornets pit.

There're also some advantages of reading the rest of the adapted volumes.
I would say that most of the hate towards Shun's side is because the anime also skipped several scenes from volume 2 from his story. Yes, Shun is also a rock in the novel but the side characters are way more fleshed out in the novel.
And during the whole Nightmare of the Labyrinth, we also see Kumoko's POV of that fight.

I think the LN doesn't have Shun's childhood as well, so it makes sense they didn't include it. They still simplified/skipped quite a bit of stuff, also changed the order and joined some other events that were separate. But I hear the Web Novel and LN are considerably different, detail-wise, although the general direction of the story is the same, so it might be best not to assume they are following the WN.

Oh I see, that's what you mean. "The whole volume" is a little exaggerated. It's only some minor side stories, to be honest. But indeed, there's some stuff about his childhood there, guess I didn't care much about it and ended up forgetting.

Shun literally has half the chapters dedicated to him in volume 1. Its not minor at all. Anyway the anime skips a lot of detail regarding skills and some interesting Kumoko parts. I’d highly recommend to start from the beginning. Otherwise your just missing out.

I will come out and say that we are not done with Volume 3, Shun is only like a third of the way through his chapters. I wouldn't recommend skipping V3 anyway since the anime skipped a lot of the best scenes there.

There isn't a lot missing from V2, the "Lord of the fire sea" being the biggest cut, and a lot more explanation about wisdom, height of occultism, pride, etc. Katia maybe being the second, she has an entire storyline with character development that has been cut entirely from the anime.

V1 was also pretty well covered except they skipped 100% of the human parts, certain characters, an entire battle, and Araba has more impact.

In general the LNs will provide a lot more of kumoko's monologues and self dialogues (she basically never stops talking), in addition to complete explanations of the skills and where she got them.

I would recommend starting from the beginning: It has a lot of skipped scenes and foreshadowing, its a really good book in general, its not that different of starting place if you are planning to read to 11, and it really benefits from the depth of explanation.

Something like Overlord or Slime I would just say start at the first book after the anime, since although they have cuts they usually aren't major. But spider, beginning every time even for a reread since you pick up so much more of the hints.
