Can somebody explain the mecha ending trope to me?

I noticed a lot of mech anime like to end by having the main characters usually jump a vast distance across time and space, fighting continously throughout, some anime even like to say they fight for eternity.

For example the Getter Robo Armageddon anime ends

Darling in the Franxx does a similiar thing, except they only fight for 2 years; Gurren Lagann shows us the fight but it still takes place in a different dimension.

Does anybody know where this "trope" comes from? Or what it means even?

Probably because they want to take the already grand theme of mechas into a more grander scale, I don't know when this first happened, but Evangelion is the oldest anime that I can think of that has this trope

Hmm that sounds like something that would fall in line with the idea of super robots but clearly that can't be the only thing right? Shouldn't there be more examples of super robot shows that approach this differently then?

That's true, but they probably saw Evangelion's success and thought "that's it".

Also, some Gundam series have different takes on this, I don't watch Gundam so I can't pin point which one I'm talking about, but I'm pretty sure one of them had VR/AR involved

It's more of a "super robot" thing, that's been around since the 1970s Getter Robo manga.
Which the creators of Gurren Lagann are a huge fan of, look up who Mr. Ken Ishikawa is.
