you can start with xy, but not xyz. most pokemon generations work as a single unit, but xyz is the second season of generation 6, so you cant really start there since its the middle of his journey.

You wouldn't want to start with XYZ cus you'll miss out on do many characters,battles and lore implications and wouldn't understand anything that's why I would recommend to start by watching XY series first then move on to XYZ

Extra tip: Watch the movies also if you get time cus all Pokemon movies are Goated

you should consider starting from "Pokemon XY: Mega evolution special" (4 eps). It is a prequal to the parent story and provides context for the character of Alian who is introduced later in the series
