Purple, green, pink, silver, light blue. Though depends on the eye color too, cant choose one.

That's an interesting question, and I'd like to change my vote after thinking over it.
I was always a big fan of white hair because it had something mysterious ; characters with white hair usually have this mysterious, epic vibe, and are usually associated with mystic powers and other worlds. Also, purple ; characters with purple hair are often unpredictable, also mysterious, and sometimes hold an important place in the anime. They often have mysterious powers.

My choice now would be peach. It gives a soft vibe, yet energetic if it's a pink-ish peach color. There aren't that much peach-haired characters, and that might be one of the reasons it's my favourite. It looks quite normal, yet it is uncommon in anime.

E.g : Freyja Wion ( Macross Delta ), Ririna ( Koi to Uso ), Kisumi Shigino ( Free!), Mirai Kuriyama ( Kyoukai no Kanata ), even though her hair sometimes looks orange and pink in the anime.

Green-haired characters also have something interesting, as they're often associated with nature and its powers ( but not always ). ( e.g : Ranka Lee ( Macross Frontier ), C.C ( Code Geass ), Mion / Shion Sonozaki ( Higurashi... huh ), Tsuyu Asui ( Boku no Hero Academia ), Izuku Midoriya ( Boku no Hero Academia ), Sakuya Watanuki ( Servamp ).

That's all, but let's not forget anime hair colours are always more striking when the curtains don't match the windows. Dark blue hair and dark blue eyes don't make the blue stand out.
