So I'm watching the whole fate series in chronological order,

it says this is next after Fate/Zero however it doesn't matter if you watch this next or later on

that being said, does this anime have any major things about the story that makes worth watching after Fate/Zero? as it happens just before Fate/stay night, should I watch it to fill any potential missing details?

If you like Waver Velvet character., it's a nice spin-off and it tells a lot about the Tower Clock in London, where the Mage's Association it located. Association was showed on Fate/Zero and two mages from that Holy War came from there. It's a relevant place for the Nasuverse (Kara no Kyokai, Mahotsukai no Yoru, Fate)

It doesn't contain any connection between the Zero and the Stay Night stories, it is just a spin-off to talk about Wever Velvet, a survivor master of Fate Zero.
It shows you the clock tower organization but it isn't of extreme relevance on the following story.

It's not really relevant to the plot of Fate/Stay Night, but it is a good spinoff featuring Waver from Fate/Zero, and the worldbuilding is good. You'll learn more about Clock Tower, the Mage's Association, Mystic Eyes, Mystic Codes, and more. I'd say if you like Waver, or if you like the series' worldbuilding, watch it after Zero, but it isn't necessary to watch if you don't want to.

If you hated Waver Velvet, Then this is his Redemption arc. Its not too important but it does help to watch this before Fate Apocrypha, as some of the characters are in El Melloi II.

It Mostly Just gives you insight on the Clock Tower in London. It has a Saber Face as well!

Nothing related to stay night, but some pretty heartwarming callbacks to Iskander and how his relationship with Waver made him grow. Music is great, and there was unexpectedly a Saber-face in the show.

it's a good watch for sure especially if you like waver but it doesn't have much relevance considering date/stay night. I would 100% recommend watching it before Strange fake though!

This is going to tie into Fate/Strange Fake pretty heavily so I'd say it's worth watching
