i have to inform you that the original Higurashi looks quite aged.
i know that some people can’t enjoy an Anime that looks like this.

if graphics are a Must Have for you, i suggest to watch first Gou/Sotsu.

if you like them I’m sure you will be able to watch the original (which also has a better story)

If you just wanna see something horror, then watch Higurashi 2006 first.
Then go Higurashi Kai.

Higurashi Gou and Higurashi Sotsu it's up to you to watch or not, because Story is not good as Original.

Higurashi Gou gonna be boring if you not understand story. So I'm more recommend watch Higurashi 2006 and Higurashi Kai first.

Watch the original series first.

1. Higurashi no naku koro ni (2006)
2. Higurashi Kai (second season)
3. Higurashi Rei (5 episode "epilogue" OVA)

The more recent series is a sequel NOT remake, and one I wouldn't recommend but upto you.

4. Higurashi Gou 2020 (sequel to Kai)
5. Higurashi Sotsu (second season to Gou)

The way it goes is Higurashi (2006), Higurashi Kai, Higurashi Rei, Higurashi Outbreak and Kira (both optional), Higurashi Gou (kind of a reboot but it is really Higurashi season 3), and finally there is Higurashi Sotsu. If you want to keep going with the When They Cry franchise from there, then read the Umineko When They Cry visual novel or manga (don’t watch the anime because it was left unfinished, also this part is more mystery than horror but still worth checking out) which goes Umineko Question Arcs then Answer Arcs, and finally the most recent installment is Ciconia When They Cry which is an ongoing visual novel.

Yes Gou and Sotsu are just another fake parallel universe another "what if scenario" so basically it never happened in the first place you can think of it as just a bad dream. The real original world already ended at Kai and Rei.

If I were to advise someone desiring only to watch the main story of this series then I would recommend staying mainly with the original TV-aired seasons, skipping Gou and Sotsu altogether, as well as about half the OVA content.

The viewing order would go as follows:

1.) Higurashi no Naku Koro ni (season 1) (2006) (26 episodes)

2.) Higurashi no Naku Koro ni Special: Nekogoroshi-hen (special episode which couldn't fit in season one for whatever reason, taking place either sometime during season one or between seasons one and two; best to watch it between the two seasons as it has no exact specified placement number) (2007) (1 episode)

3.) Higurashi no Naku Koro ni Kai (season 2) (2007) (24 episodes)

4.) The middle three episodes of Higurashi no Naku Koro ni Rei, episodes 2 - 4 of a 5 episode OVA as a really nice fitting epilogue (OVA) (2009) (3 episodes)

5.) Bonus - If you really love it and want one more bonus episode on top of that which can also serve as a final postscript and sendoff which feels in line with the series, episode 4 of the four episode OVA Higurashi no Naku Koro ni Kira (OVA) (2011) (1 episode)

I would say the first two seasons and Nekogoroshi-hen are the absolutely essential parts comprising one core story, and that would be 51 episodes. It becomes 54 episodes if you add the three from Rei or 55 episodes if you also add the last one from Kira.
