I don't remember if this happened in the manga but yeah, it would be cool if Tanjiro could use Water Breathing to defend against attacks and use Sun Breathing for the offense.

Everyone could learn multiple style of Breaths, most just don't since each person only can be really good at one particular style. You can learn 100 Styles and still can't beat the guy who mastered 1 Styles.

No. The sun breathing was literally an asspull that came out of nowhere. Tanjirou already gets way too many random powerups throghout the series for literally no reason. Giving him more powerboosts just because would make the series even worse.
