For publishing and localizing/simulcasting Japanese media, the ones that have made themselves the biggest that I am aware of for the visual novel field, would be MangaGamer. For the TV animation field would be Crunchyroll. I am not sure about the Japanese gameplay field, since I am not that involved. How about the manga and light novel field?

If we're talking light novels, then Yen Press. Here's all the series they've licensed under their LN imprint, Yen On: http://www.animenewsnetwork.com/encyclopedia/company.php?id=13431
Death March to the Parallel World Rhapsody should also be there but, apparently, ANN can't be bothered to add it to their encyclopedia yet!

VIZ has released some novels in the past, but now they mostly focus on side stories of their big sellers (Naruto, Tokyo Ghoul, etc.). They're also currently releasing Legend of the Galactic Heroes.
Vertical has licensed some light novels as well, Attack on Titan spin-offs and the Monogatari series being notable examples.

As for manga, I guess VIZ? They seem to license the most popular stuff. In terms of catalogue size, they're probably number one.

Yen Press for light novel, but Kadokawa has bought them so they will be getting a huge catalog boost, but the chances they will publish more Shueisha and other works is low.
VIZ for manga.
Dark Horse, Seven Seas Entertainment, Vertical and Kodansha comics USA are other noticeable publishers.

Don't the Shueisha titles go to VIZ. Maybe you meant Shogakukan (Oregairu novels/manga being the only title off the top of my head).

If I may direct you to this little article: http://www.publishersweekly.com/pw/by-topic/industry-news/publisher-news/article/70380-hachette-and-kadokawa-partner-on-manga-and-graphic-novels.html
In addition to continuing to license comics and prose works from publishers other than Kadokawa, Yen will produce its own original material and will have a first-and-last-look option on licensing Kadokawa’s manga. Meanwhile, the Japanese house will still license its manga to other publishers.

Basically, Yen Press will be able acquire titles from other publishers as they always have.

@DoubleMangekyo Viz mostly gets Shueisha's big shounen/seinen titles thou, almost everything else is barely considered.

But Kadokawa now owns a majority of yen press meaning those other publisher's money also goes to them, kinda counter productive.

Yeah Viz is definitely the biggest manga publisher in the west, but that's kind of due to their long history in the business and ties with Shueisha, which is one of the biggest manga publishers in Japan.

Basically how licensing usually works like this

Viz - Shogakukan and Shueisha
Kodansha USA - Kodansha (most)
Vertical - Kodansha (others, usually more niche titles)
Yen Press - Kadokawa and Square Enix
Seven Seas - smaller publishers
Dark Horse - pretty random publisher wise, but usually gory/lewd seinen titles

In 2021 or this year, Kadokawa is the largest japanese publishing company of light novels since they have a 70% to 80% share in the LN market (According to Wikipedia).

They own a lot popular imprints like Dengeki Bunko (Largest LN Imprint), MF Bunko J, MF Books, Famitsu Bunko, Sneaker Bunko, Beans Bunko and a lot more minor Imprints.

If english light novels then Yen Press takes the cake (owned by again, kadokawa and Hachette with 51% of the ownership belongs to kadokawa)...
