If you want a more slice of life option, I'd suggest 3-Gatsu no Lion. It focuses more on the growth of the main characters mental wellbeing and relationships! Absolutely phenomenal show in my opinion.

If you want anime that shows growth of strength rather than just character, I'd suggest almost any sports or shonen anime to be honest.

I would recommend the A Silent Voice (Koe no Katachi) movie, about the mc getting over his depression and anxiety.
Or Violet Evergarden, about the mc learning what “I love you” means after being a human weapon in the war.
Your Lie in April is just amazing (heart wrenching tho).
One Piece is great, it shows a lot of improvement strength wise; if you don’t wanna invest your time into the anime, you can read the manga (the pacing is better).
