I'm at that point where I either own or know about the popular manga series and it's all very same-y in terms of manga style, setting, story, character archetypes, character development etc. and thus I'm somewhat desperate to find manga which are new and unique in some way.

What I'm currently reading in that regard:
- Saga of Tanya the Evil
- Spy x Family
- Girls' Last Tour
- Pluto
- Made in Abyss
- Land of the Lustrous
- Inuyashiki
- Jormungand
- Fire Punch
- Delicious Dungeon
- Dorohedoro
- Blue Period
- Dead Dead Demon's Dededededestruction
- Blade of the Immortal
- Black Lagoon
- Biomega
- The Ancient Magnus' Bride
- Vinland Saga

Are there any specific genres that you are looking for or are you up for anything?

Have you read anything by Osamu Tezuka? He was a famous man with a signature style, but most people have not read his work.

My favorite manga of his is Phoenix.

First I would recommend the works of Inio Asano.
In your post you said you are reading
Dead Dead Demon's Dededede Destruction by him,
his other mangas are also worth checking out, if
you not already know about them.

Further manga I would recommend:
Ajin
Anne Freaks
To your Eternity
Saishuu Heiki Kanojo
In this Corner of the World
Ikigami
Who is Sakamoto?
Our Dreams at Dusk
Blue Flag
The Flowers of Evil

The Flowers of Evil is by Shuuzou Oshimi and
while I haven't read into any of his other works,
they certainly seem interesting and I think I will
read some of them sometime, so I would also
recommend you to look some of them up to see if they seem
interesting also too you.

Yuureitou is also quite a good manga, but I would
recommend to read a bit further into the manga, before
you make a final judgement about it.

Finally, I would also recommend Erased. Through this
is one of the more popular series, it is not one
of the insanely popular ones and is also different from
mainstream so I will still include this.

I hope my post can help you to find some new series you will like.

My method to cheat this problem is to read something outside Japan like Solo Leveling or Noblesse since the culture and story beats can be different (and why the CR adaptations can miss the mark so bad). This gets glaringly obvious in the romance genre with stuff like Devil's Trill or Good Luck.

For stuff published in Japan, try compilations of Yoshihiro Tatsumi's short stories, like Abandon the Old in Tokyo. They contain reflections of human society since Tatsumi grew up post WWII.

Or maybe something like Crying Freeman, Genkaku Picasso, or Ikigami by Motoro Mase.

For Josei/shoujo, probably try a Mitsukazu Mihara or a Moto Hagio work.
