Maybe it just the Steven Universe fan in me, but I am a sucker for musical episodes. Other anime like Akiba's Trip The Animation and Digimon Universe: Appli Monsters recently did musical episodes, I wonder Little Witch Acadamia.

Anyone with info on the seyus, any of them have any singing background, either sung in a anime in the past or have singing professional?

If Space Dandy is able to do a school musical episode, I can see Trigger somehow finding a way.
Luna Nova is in need of money and singing to save the school is a tale as old as time.

Because only Steven Universe has musical episodes?

Come on, almost every Cartoon Network show has a musical episode - Cow And Chicken, Dexter,s Laboratory ect.

And how about MLP:FIM, not to mention a bunch of live action shows like Buffy?

It is possible for LWA but not very characteristic for anime.
