Some josei/romance maybe?
Sakamichi no Apollon may be good Beck. Not a ton of romance.

I don't know, it looks like all you watch is mostly shounen so experiment on different genres more!

Ummm, it's sort of difficult to find just one to recommend when that category is so broad. (shounen probably only covers about one fourth or fifth of all anime) Soo... I guess I'll put one recommendation for every genre except shounen, but if you don't know what one is please look it up first so that you don't accidentally watch something you regret.

Shoujo: Madoka Magica (it's actually REALLY good)

Seinen: Baccano

Yaoi: Junjou Romantica

Ecchi: High School DxD

Josei: Honey and Clover

Horror: Higurashi no naku koro ni

Comedy: Binbougami Ga!

Romance: Say I Love You

Strange Thought-Provoking (is that a category?): The Tatami Galaxy

Vampire: Shiki

Slice of Life: Lucky Star

Not Really Sure What Category: Mushishi and Clannad

You Might Like: Trigun or Ghost in the Shell: Stand Alone Complex or Hellsing

Absolute must-see mature, no kiddy bullshit anime:

Berserk
Monster
Evangelion (don't let its appearance deceive you, this is one of the deepest psychological anime out there)
Texhnolyze (very slow paced mature anime, absolutely meant for deep thinking adults.)
Serial Experiments Lain
Jin-Rou
Phantom, Requiem of the Phantom (doesn't really get more mature than this)

btw Madoka isn't Shoujo. No way.

Seinen: Uchuu Kyoudai, Monster, Big Windup!, Kiseijuu, Shinsekai Yori (actually this one doesn't really belong in any demographic)

Shoujo: Ao Haru Ride, Natsume Yuujinchou, My Little Monster, Kimi ni Todoke, Kamisama Hajimemashita

Josei: Nodame Cantabile, Honey and Clover, Shirokuma Cafe, Kuragehime, Chihayafuru

Personally I think it's a very unhelpful method to classify anime. Both Hidamari Sketch and Monster are seinen. Chihayafuru is josei while Utena is shoujo. Shounen encompasses pretty much everything under the sun from Magi to Claymore to Hikaru no Go.

Original anime have to be pigeon-holed into these manga categories. Is Mononoke seinen or josei? Does it even matter?

I'm giving the general ones from each category that a non-demographic fan can get into.

Madoka is FAR from being a shoujo lol. It's a seinen.

Clannad is romance.

Anyways, I recommend Shinsekai Yori. The farthest away from being a shounen from what I've seen I think.
Madoka Magica is not your everyday anime either. Since most of your list is action, you'll like this one. It's a dark look at Magical girls. Don't judge a book based on its cover.

Anyways, while I haven't seen it, Serial Experiments Lain should be good as well.

However, Lain and Shinsekai should be watched later, since you seem to have not yet traversed the path of psychological anime.

So watch Madoka first, then the other ones later.

heres some great shit that doesnt at all adhere to typical anime formulas

mushishi (slow, atmospheric, episodic, not to heavy but very serious)

monster (complex, such an insanely complex plot, mystery, very heavy)

ping pong (sports anime taken to the most artistically interesting extent ive ever seen, very stylized, very fun)

shinsekai yori (atmospheric, interesting mystery, fantastic world building)

baccano (very fast paced mystery)

madoka magica (very dark, very stylized, one of the best)

tatami galaxy (conceptually very interesting, heavily stylized, highly original)

My comment wasn't really directed as you. It was a more general rant about the dominance of demographics as a classification mechanism for anime. Saying something appeals to "men over twenty" tells me nothing. Same for "girls under fourteen." I'm a man in my sixties who enjoyed Kamisama Hajimemashita, though it didn't hit home the same way Bartender did.
