There's no official watch order. Fate isn't a single continuity where everything happens in the same timeline.

Watch Deen 2006 -> Ufo UBW -> Ufo HF and then branch out. The events in Zero happened in a different timeline from Stay Night.

Then pretty much the same? Fate/Stay Night's source material was fully released 2 years before Fate/Zero's.
