Psycho Pass's first episode got me excited for the rest of the series just because I was interested in the sorta-utopian-but-sorta-dystopian world the show set up.

I guess Garzey's Wing counts too, because holy fuck, the first 20 seconds of the first episode immediately had me laughing like a jackass. *Random dying cicada*

Haikyuu!!, Hataraku Maou-sama!, Baccano!, Major (;_;), Terra e..., Gekkan Shoujo Nozaki-kun (seriously).

Watched Death Note's first episode and wasn't impressed. Actually, it looked and felt kind of stupid. Especially the end, if I reckon correctly. The way the kid talked and acted couldn't be funnier.

Well the first few episodes of most of the anime that I love could be included but a couple particularly stand out: Attack on Titan, Death Note, Code Geass's first couple episodes all were incredibly engaging and got me crazy hooked on the anime. Although I still haven't finished it yet, Psycho-Pass's first episode was also brilliant just for having such an incredibly tense and exciting atmosphere that introduced the concept, world and moral dilemmas of the anime in a very easy to follow scenario. Outside of first episodes that got me really hyped I would say that GTO's first episode was great in just establishing Onizuka's character and everything that the series would be like.

Shingeki no kyojin, Death note and kaze no stigma. These 3 got me hook right a way, I was immersed in these series.

I normally give the first 3 episodes of an anime a try before dropping it or not. With that said, No Game No Life in the first 3 episodes got me hook. Death Note was another one.

Quite a Few.

Angel Beats, Nobuna no Yabou (Am a sengoku fan so...) Durarara, Cross Game and Major, First episode were pretty much identical in terms of theme. honey and clover.

Shigofumi comes to mind..

one of the best couple first EPs imo... and I've gone through over 1k+ anime not including 99% of hentai ever created.

Shingeki no Kyojin had an amazing first episode.... wasn't too fond of what followed, though. Same with SAO, amazing first episode, but the following episodes were much weaker in comparison.

Death Note had a great first episode, but it was the second episode that stands out to me. The L v Kira ending with the "I am.... Justice" was just too awesome for words.

Hataraku Maou-sama! had a comedy goldmine of a first episode. I still remember all the fuss in the forums about it. Glad I got curious enough to check out what the fuss was all about.

Gekkan Shoujo no Nozaki-kun is absolutely brilliant in it's 2 episodes that came out so far (counts, doesn't it?). A complete betrayal of expectations, in a good way.

Inugami-san to Nekoyama-san is a short that really dragged me in with it's first episode. I'm not even a huge fan of yuri, yet it dragged me in so much I kept watching the episode again and again.

Guilty Crown also had a very good first episode, though it faltered later on. I still loved it though.

There are still many more, but I guess I'll end this here for now.

Im still watching it, but the first chapther of LOGH gave me the biggest and strangest boner of my life, Another drived me crazy waiting for the next chapter from the go, and i watched the movies of Break Blade all 6 non-stop during one night

Soul Eater owns the title for best 1st episode. It has everything you could want. Blood, boobies, scythes, awesome female fighter, Blair naked in a bathtub, comedy, awesome animation, plot twists, action, and even Death himself!

Other great 1sts:
Trigun, Attack on Titan, and Akame ga Kill!.

Psycho-pass had a great first episode. It made me think that this was a series worth getting invested in solely because of the introduction that it gave the main characters.
