Bleach's plot sounds pretty stereotypical, unoriginal, whatever you want to call it. I don't watch a lot of shounen anime, so even if the plot sounds disappointing, I wouldn't be able to name any anime that's exactly like this one.

The art in Bleach went from being pitifully difficult to look at, to fantastic. The first episode of Bleach I saw was episode 279, when the art had already blossomed. From episodes 1 through 200 ish, I couldn't staaaaaand the art. The characters always looked angry, unproportional, and I didn't like it one bit. I was only so absolutely disappointed because like I said, the first episode I saw had better art. If I had watched the first episode, and compared it to the last, I wouldn't even believe it was the same show.

People usually hate dubs because a lot of them are pretty bad, but the Bleach dub is actually one of my favorites. The characters sound the way they look, and timing is good. I don't see what's not to like about this dub.

There were so many unbelievably cool characters in Bleach that hardly got any screen time. For example, the Visoreds. I loved the Turn Back the Pendulum arc because it was all about them. Shinji got a fair amount of screen time, but Lisa, Rose, Love, the rest didn't get very much.

A lot of Bleach is made up of filler episodes. I skipped them all because they were pretty boring to me. However, the battles that go on after the filler episodes makes up for it all.
One arc that I really hated was the Bount arc. There was way too much time spent of the Bounts, and not enough time spent on the important fights.

Aizen and Gin's battle, as an example, lasted maybe like half an episode like what the heck is that all about

The Shusuke Amagai arc was pretty trivial as well.
If all the unimportant fillers and arcs were removed from Bleach, it would probably only be about 150 episodes long. That's just my opinion, though.
Although there are a lot of things I hated about Bleach, there was something about it that made me so happy, and that something was enough to keep me watching for 356 goddamn episodes. I wouldn't recommend Bleach to experienced Shounen fans that are super critical and knit picky, though I recommend it to less critical, experienced fans. It's a good anime to watch for fun, don't expect anything more. There's also a lot of comedy throughout Bleach, so it's good for some giggles.
