yea... the Anime goes through the entire story, Fate/Stay Night is actually a h-game, an extremely popular one to boot, one of the best known in Japan actually. there are 3 general routes that you can take in the game, and they did the "Fate" route in the anime, though they added in a bit of the others. so no 2nd season. If you kind of liked Fate/Stay Night, you might want to check out "Tsukihime" another anime based off an h-game by the same people, Type-Moon, though Tsukihime the anime is not nearly as good as Fate/Stay Night, it feels somewhat similar.
well there are good dubs, like "Outlaw Star", and there are bad dubs, like "Naruto", in Naruto, the characters didnt even have their original attitudes much of the time, for example Kakashi, hes supposed to sound bored all the time, instead he sounds like he actually has a decent amount of enthusiasm.
there is a English dub, its been licensed already, but I just prefer watching all anime in its original form (Subs), most dubs are not that great anyways, only once in a while will you find a good dub.
oh, i have a nice one: Samurai Champloo (Action/Adventure)
takes place in late feudal japan, where a girl searches for "a samurai that smells like sunflowers" with the help of two samurai, one with a flashy unorthodox style of fighting and one with a traditional style. it has a kind of punk atmosphere.
I really loved it, tons of sword fighting and stuff along with a couple deep moments too.

guy gets saved by mermaid, however its a law that if a human sees a mermaid, either the mermaid or the human is to be killed, so their respective parents decide to put them in an arranged marriage. random hilarity ensues.

ef - a tale of memories (Romance/drama)
two stories, one of a boy that meets a girl that has a mental condition where she has no long term memory. and also another about a love triangle that ensues when there are 2 girls and 1 guy...

claymore (Action/adventure)
in a world filled with demons, half human half demon women called "Claymores" fight the demons that terrorize the land. the story revolves around a kid that lost his family to a demon that decides to follow one of these claymores.
I also recommend this series, its quite good, but the manga is even better.
lovely complex (Romance/comedy)
the adventures about a very tall girl and a short guy that dont really seem to fit very well. called a comedic pair by others at school, they spend time finding out about themselves and just hanging out as friends.
I dont really recommend this much... its a decent series, but i dont think its worthy of being held as a gem that is a "must watch" kind of series. doeman may see differently, but if you like romance comedies, then it might be great for you.
I shall ask once more, what kind of stuff do you like? it makes recommending MUCH easier.
