Well from looking at your Watching list, I would say I thoroughly enjoyed Steins Gate, Psycho Pass, and Hyouka. In your plan to watch I think Shinsekai Yori and Shiki would be good choices. They both are kinda slow but by the conclusion I think you would be pleased. Otherwise it really depends on what sorta story you are looking for. If it's something relaxing and amicable I would check out the Aria series or maybe Chihayafuru and Clannad. If you prefer the mind bender of psychological, Serial Experiments Lain, Haibane Renmei or Texhnolyze are pretty crazy. They will really make you think but can be hard to follow do to their meticulous nature. Neon Genesis Evangelion is also a show that will make you think. Otherwise I really enjoyed Perfect Blue, Mononoke Hime, and Baccano! Hope this was helpful. There really just are to many great shows, let me know what you think of any of those, if and when you decide to watch them.

My favorite manga is probably Berserk. I never add my top 1 to favorites though.
