As you age your view of the world and people changes
Personally I noticed and learned:
-My eyesight is bad.
-people between 15-20 are literally kids.
-Adults are grown up body with a kid brain who are experienced with life. I have stumbled upon so many people not knowing how to do some basics whereas their careers, their profession is what they are good at.
-Karens. entitled people. they fucking. suck.
-I enjoy eating bland food. younger me would dislike it.
-Smoking is bad. like real bad I have been told I look younger than my age compared to people who is slightly younger than me in age but got wrinkles and bad skin.
-I dislike changes
-I thought people knew how to drive. hell no. but apparently I'm one of them lol

I am a grumpy old man as well with negative world of view, I always give a second thought of how people may behave and avoid narcissism whenever I can. I do however get enjoyment when I see people suffer its just how I am.

My preferences of anime hasn't changed that much I have always enjoyed and prefer adult-themed anime with good direction of the story. What matters to me is it's not just about the story, soundtrack etc. I enjoy seeing different perspective and motives of antagonist and protagonist characters. this could be simplified and explained by using Eren Yeager's motives vs Reiner Braun whom some or maybe many thought was a bad guy back in 2017 but turns out he had his own motives and purpose to support Marley and the story widened.
What I really dislike is when the plot and outcome is extremely obvious it destroys the highlight or "wow" moment because you know whats about to happen. (Fuck you My hero Academia if anyone watches and praises that anime and likes it, my respect to that individual goes down slightly)
But the thing is I have also noticed in most form of media and entertainment (this is just saying without any backup sources, just out of my mind), they need to generate money and earn views to hit their expectations. if not there may not be a new season and instead they'll try something else and make a show of a manga and the cycle repeats.
Again im going use hero Academia it has 3 million members due to how straightforward and dumb it is which is just how how many people enjoy to watch. I understand it from children point of view because they like action and many characters to like/dislike, but 3 million is still alot meaning many aren't paying attention as much as details and plots/characters as we do in different anime. I think it may be one of the few reasons why like you and I for example are able to enjoy the "masterpiece" whereas many others dont or dont understand what it's about and gives up.

That said there are times when I crave simplicity and dumb shows just to let time pass and enjoy whatever I am hearing and seeing from the show or anime if I'm multitasking for example.

Also 90% of the anime released bores me there's nothing good

Not having 10 is okay but 9/10 are pretty rare, still, monster, hajime no hippo are 9/10. I would say that changing our point of view as we grow older is normal and i personally dont have 10 on any account except one manga. You have good taste and i look forward seeing this completed list!
