Man there's tons of great Action/humor anime that I know of. Here's a list of all the ones I know besides One Piece that I love.

Hunter x Hunter (On going at episode 83)
Yu Yu Hakusho (112 episodes)
The Law of Ueki (51 episodes)
Soul Eater (51 episodes)
Kaze no Stigma (24 episodes)
Katekyo Hitman Reborn! (203 episodes)

If you're looking for a shorter episode anime to watch I suggest The Law of Ueki, Soul Eater, or Kaze no Stigma. Also, if you know how to torrent you can get most of these from Bakabt. Bakabt is a torrent website that literally has almost every anime. If you don't torrent then I guess you'll just have to find a way to watch it online.

One Piece is just a damn masterpiece. Like many things you will get used to it, and the art style does get nicer as you get farther through it. One Piece has really epic fights, amazing characters, badass villains. You'd think a 600 episode anime would get boring, well this doesn't. It's just too damn epic. I think you should give it another try (watch the anime).
