They're all so different but each one of them represents an unique experience, from an action-comedy shonen, to a slice of life, a romcom or a mecha with politics. The best of the best, a must-have experience if you like anime.
Love Live! and Euphonium are more like a slice of life/drama with a personal approach. In the case of LL there is a lot (a lot) to cover so I'm not doing that here. It is also a huge and incredible franchise. Check it out.
The Quintuplets one is the king of romcoms. Violet Evergarden has the smoothest animation ever with a pretty heart-touching story. Steins;Gate is simply awesome and keeps you attached every second. Gundam covers war from all perspectives. Black Lagoon is an action packed drama in a realistic scenario. Angel Beats and Clannad are things that you should discover by yourselves. Sket Dance is hilarious but it can be a tearjerker sometimes.
Gintama is all of the above.

Gintama is, to me, the best show ever. Most people are scared of the amount of episodes and because most people says "It gets interesting around episode 100" but that's a lie. It has plot, and maybe the best I've seen. Yeah it takes a while to reach the characters and start moving everything. But the fact that they live a carefree life at the start does not mean that nothing is happening. It is part of the plot, and when you reach the climax the reward is unique.
Do yourself a favor and watch Gintama. There will never be something like it again.

Now if I talk about Love Live! it could take me a huge text. But I can summarize some of it with this. What makes a show good to you? Well, maybe a good story, high quality animation, a good soundtrack, script, direction, or more. I think they're all just things that come together to make the true reason why a show is good, the feelings it may cause. What is art to you? If you think about it as something to create feelings, then this show is an authentic masterpiece.
If you watch Love Live! with its deserved attention, I'm completely sure you'll like it, and it will make you feel something that you won't forget. It's not just cute girls singing and dancing, watching it with that mentality will ruin the experience.

And I'm talking about the entire franchise, with all its projects and groups. So don't skip the first part, and don't leave it before reaching the last one either.
This experience may give you something that will change your life.
