Something you have to understand bout one piece, is it does take some patience, oda crafts a delicately written and multi-layer narrative including events happening off screen. There is a sense of a much larger story involved, but one piece kind of has a particular format that it likes to follow and i kind of see it as different stages. For example the notoriously horrible fairy tail series starts off with character background arcs that center around the major characters, before the "real" plot starts get more involved.
One piece in a way is kind of the same thing. Accept for the first quarter of the series is obviously much longer then fairy tail. But there will come a time where as you get further in the show, the story starts to tighten its grip and everything kind of becomes more cohesive in a way and less episodic. But i think oda does an amazing job at foreshadowing, that seems to be one of his absolute talents when constructing one piece. Its almost as if the author knows what the entire end game plan of the series is going to be and everything in the show is building towards that climax. I am still always finding new mysteries and new theories in the early parts of the series that i never would caught before that are relevant to later arcs. It is quite amazing and it really speaks louder then words that the author knows full well what he's doing and the the direction of where he's taking the story. Unlike alot of other authors Kishimoto which ran him self into a corner and the final arc felt some what claustrophobic with so many idea's kind of coorelated into one massive end game plan or Kubo Tite which ended up with alot of unresolved issues and the final arc turning out to be a dues ex machina.
Now its rather or not you can muster the pacing of the series, if you think of one piece as kind of a heavily "character driven" narrative, then i think you will enjoy it. The characters are definitely the driving force behind the shows's writing. The other thing bout one piece, is it only continues to escalate and improve its quality from a writing perspective, the further you go along. Whats happening currently in the show is just out of this world, in fact the treasure "one piece" might not be to far off :p But in any case its a major testament to how oda can keep a show running so consistently for 20 long years and to me that is just an exceptional talent that many authors just can't sustain, either they lack the motivation or the commitment, or they get tired of there work (IE Hiro mashima).
But give it a shot and see how you enjoy it. I realize its not for everyone, also the quality goes through like 4 major upgrades over the entire lifespan of the show, keep in mind this is a series that started back in 1995.
