I tried to watch Neon Genesis Evangelion series and movies in one sitting in attempt to understand it. Lets just say it wasn't pretty for awhile and I learned that insanity isn't all that bad.
I am the light and the darkness tossed away by fate.
I am hope and despair needed by all and to none.
I am CuresDestiny.
Fear me or Not it is all the same to me.

I actually did a paper comparing Macbeth to Higurashi... not that my teaher got it, but hey, I got an A. Anime has influenced the way i write tremendously, plus i owe the fact that I now plan to become a psychologist partially to Higurashi/School Days/Chaos;Head/Elfen Lied/[Insert psychological anime here] because they got me interested in the human brain.

Plus the random quoting followed by everybody staring at you (unless somebody else gets it, then everybody stares at the both of you.)

Ergo Proxy and Texhnolyze are pretty good too.
Those are good, but Paranoia Agent and Lain are where it's truly at.

And Code Geass makes me want to be as badass as Lelouch. And Nodame Cantabile (?) got me back into music for a little while. And Mio occasionally makes me want to play more bass guitar.

I started taking a liking on psychology with Higurashi no Koro ni series.
It continued with School Days, Welcome to NHK, Ghost Hound.
I eventually learned and studied a bit about Freud and Jung.
For philosophy, Kino no Tabi and Serial Experiments Lain mainly changed my views.
The effects became permanent after completing Texhnolyze. It redefined despair.
Why don't schools have anything of the same level to these anime titles?
The threat is stronger than the execution.

Anime is what convinced me to try slacklining. I learned about it through rock climbing and thought it looked kind of stupid. Then I watched kaleido star, saw the awesome tightrope episodes, and realized, I CAN GET THE STUFF TO DO THIS!

It is also, the reason I love classical music, which is in turn the reason why I'm learning to play the violin and I'm saving up my money to attend a violin making school and make my living that way. HOORAY FOR PRINCESS TUTU!

After watching Bakuman I had the dream of becoming a mangaka, I quickly rushed to my drawing table and drew. After 5 minutes I decided to quit on my dream. -_-

Anime has made me start learning to draw (which I'm horrible at, but I like to think I'll learn one day if I practice regularly). I'd also like to learn some Japanese if I could find lessons somewhere in my country.

I've also (unfortunately) started to use Japanese words like 'moe' etc. in some conversations with people who have no idea what they mean.

"No pain, no gain."
"If it doesn't hurt, you ain't doing it right."
"Endure."
I'm pretty sure those got hammered into me by watching anime when I was a little kid. (shounen and more recently Lee from Naruto)

I also remember that while watching Captain Tsubasa (and afterwards) I went with my football everywhere. Everywhere. It was what really made me pursue soccer (i'm a girl and i was like 8. played soccer seriously til 15).

It taught me the value of hard work when I was a kid. Gave me friendship values and hopes more or less at the same time. Probably got me into girls as well. And when I was angst-angst-teenager I had to watch Evangelion and related, just to make me think of what truly is a crappy life and to make me think about the world (ugh, philosophy).

I had a period in which I prayed to the spirits in the rocks and rivers, actually, I still do occasionally.

What else... Oh! Verbal tics and japanese expressions, cursing more than advised and postures and gestures from anime.

...

Wow, I never thought it influenced me that much until I made the damned list. ... And I think I'm forgetting stuff...

I guess anime helped to make me the person I am today.

Yes, always.

Most of my influences are from certain characters rather than the anime itself.

Vegeta - DBZ
Zoro - One Piece
Zack Fair - FF7
Takamura - Hajime No Ippo
Shanks - One Piece

Safe to say these epics actually refined my own characteristics and taught me a lot of valuable lessons.

They are also the reason I started working out a few years back. ^^

I became interested in learning Japanese. Now I'm going to Japan next year on exchange. I'm studying primary school teaching and I'm planning to become a Japanese teacher. So you could say anime has influenced my career path.

Also, years ago when both my sister and I where really into DBZ I remember we were doing kamehamehas in the backyard. Our dad came rushing outside because he thought we had seriously hurt ourselves because of all the yelling. XD
