Atleast 1. But best would be 2-5/6. As some characters appear in this, that appear/ have releated plot twists at those points in the series, though they aren't necessary.

from my understanding of this spinoff you can safely understand 95% (the other 5% is about the cameo of heroes from the main manga) of this show without watching the main series but im not a manga reader though i just happen to read things on social media about this over the years

I think season one at least should be fine as it's a prequel. I have not read it though so I am not 100% sure but only some characters appear in both and have some threads that connect somewhat

2 options
1. watch all seasons of vigilantes and then watch all of my hero
2. watch all of My hero & then start vigilantes

option 2 is better because in option 1 you would have to wait multiple years for all the Vigilante seasons to air and then start my hero

I have read the full series and can safely say you don’t need any of the context of My Hero to watch it! I mean, pretty much the closest you get to needing the context of MHA is the cool feeling of seeing characters you love pop up, but honestly you can just as easily understand their characters experiencing them first here.

No need to watch the rest of the season. From what ive read so far, id say its best to learn about some cameo and their motives to hook you with the characters and to wonder how they ended up like in the main series, all that is unnecessary but does make it less interesting. All i can tell is, this is just about a group of people with average abilities trying to do good with no other choice but to break the hero law.
