I'll start off by giving you some context as to what Steins;Gate actually is. In the first place, Steins;Gate is not supposed to be a standalone story. The anime adaptations of the series just cut all their connections to make it seem like they have nothing to do with one another — as if they're nothing more than separate standalone stories that just happen to take place in the same universe. But in reality, they're really more like the different parts of Jojo's Bizarre Adventure. They all have their own unique casts, settings, and central sci-fi focuses, but they build upon one another to make a wider overarching series narrative. And you often have pieces of foreshadowing spanning several entries and also recurring sci-fi concepts, plot points, and characters.
In visual novel form, the order to play the series in is as follows: Chaos;Head NoAH -> Steins;Gate -> Chaos;Head LCC -> Robotics;Notes Elite -> Chaos;Child -> Steins;Gate 0 -> Chaos;Child LCC -> Occultic;Nine -> Robotics;Notes DaSH -> Anonymous;Code. These are the six mainline games and the four most relevant side entries for the series. This series does have a tad bit of leeway for moving a few things around. But by and large, the best way to go through the series in visual novel form is in release order.
As I mentioned earlier, the anime adaptations for the series try making their respective stories as standalone as possible. And in the first place, almost all of their adaptations are horrendously rushed, with Steins;Gate being the notable exception, having received a whopping 24 episodes despite being one of the shortest entries in the series. So in anime form, I would just stick with the Steins;Gate sub-series and maybe Occultic;Nine if it interests you.
For the Steins;Gate sub-series, the definitive way to consume the series is also in release order: all of Steins;Gate -> Egoistic Poriomania OVA -> Load Region of Déjà Vu -> Steins;Gate episode 23B -> all of Steins;Gate 0. You can potentially move Egoistic Poriomania and Load Region of Déjà Vu for after Steins;Gate 0 if you really want to.
But I do want to mention that there is a bit of a complication with regards to the Steins;Gate 0 anime. The Steins;Gate 0 visual novel is largely an adaptation of three different pieces of pre-existing Steins;Gate side material (Arc-Light of the Point at Infinity, The Epigraph Trilogy, and Annularly Chained Ouroboros). And Steins;Gate 0's anime is not a conventional adaptation of the Steins;Gate 0 visual novel, but rather a sequel to or final route for it. It still presents itself in a way that anime onlies can follow along just fine with the context of episode 23B. But it is nonetheless something that's already very hard to grasp the implications of in the absence of the context of the Steins;Gate 0 visual novel and its source side material. For somebody to go through the entirety of Steins;Gate 0 without even so much as finishing the original Steins;Gate, you're just missing way too much context.
In the first place, Steins;Gate 0 is a side entry in the Science Adventure series, not its own mainline entry. And it's something you are supposed to go through with the full context of the ending of the original story. For you to go through the Steins;Gate 0 anime without the context for how the original series ends, you're not going to be understanding the relevance of what you're watching in Steins;Gate 0 as you're watching it. Even after going back to finish the original Steins;Gate, you still won't fully comprehend the significance of a lot that went down earlier. And I've seen many of the people who go through the story in its so-called "chronological order" drop the series altogether in the middle of Steins;Gate 0 out of confusion, never to finish either one of the two series. Avoid the "chronological" order at all costs. Go through the story in release order.

Just like watch order, the language somebody watches something in should only matter to the person watching the thing.
