I have a fair amount on my profile.

OVAs are always good for that kind of thing: one of my favourites is 1994's Key The Metal Idol, it's like a proto-Evangelion and Lain.

anything with Yoshitoshi ABe is worth a watch: Lain, Haibane Renmei, Texhnolyze, Niea_7... they're all weird in some way and way out of the mainstream.

I'd also recommend Revolutionary Girl Utena and Boogiepop Phantom, Utena is a fantastic, metaphorical exploration of so many things and Boogiepop is a mind-bendingly horrifying exploration of society and adolesence.

In the off-beat department, I recommend https://myanimelist.net/anime/2152/Oh_Edo_Rocket from 2007. It takes place during the 1840s when the "Tenpou Reforms" banned most forms of popular entertainment. Seikichi is a famous fireworks maker who now cannot pursue his work because of the ban. Nevertheless, he sneaks out one night and sets off a big firework that catches the attention of a alien from the moon. (The Kaguya-hime story is a backdrop for this series.) She transforms into the beautiful Sora so she can ask Seikichi to build her a firework that can take her back to the moon.

This was originally written for the stage by Nakashima Kazuki who went on to script Gurren Lagann and Kill la Kill. Madhouse brought together a top-notch team for this show including director Mizushima Seiji and scriptwriter Aikawa Shou.
