I also like Steins Gate and Dr. Stone (2 anime that are mostly talking). I also read the episode 1 to 8 is the first arc,
so if was not hook after episode 8, it safe to assume Monster is not for me??

Didn't watch Dr. Stone, but quite frankly I don't see how Steins;Gate Monster and Death Note have anything to do with each other, besides vaguely falling under the psychological tag, and including murders.
This dance is the pinnacle of human achievement.

I'd say it's likely not for you. If your not into it within the first two episodes it's likely not going to pull you in later on. There's no big bang moment if you catch my drift as it's a series I think people mostly appreciate for the writing and characters more than anything.

If you like Death Note/Steins gate you may want to check out something like Higurashi or Kaiji. Something with a bit more focus on drama/entertainment.

It's unfortunate but nothing has really scratched the Steins;Gate itch since I watched it/read the visual novel (I also recommend reading the visual novel if you haven't).

Edit: Sorry didn't read the Dr. Stone bit. Really I recommend just checking out any popular shounen in that case (Jujutsu Kaisen, Kuroko no Basketball, FMA Brotherhood etc). Depends on what you like about it though if you could elaborate.

Not necessarily. They both have similar genre tags and all as well as having been made by the same studio but that's all of it. Everything else is different. Even the "psychological" tag they're different from one another.
