Because they would all look like this.

Serious answer: I think it makes sense that anime characters have big eyes, because your run-of-the-mill anime style isn't exactly very detailed in terms of facial features, so it requires variety in the way of unique hairstyles/colours, eyes, etc, in order to distinguish them from other characters. Also, big eyes help characters display feelings and emotions more clearly, which is helpful if you're autistic and struggle with recognising stuff like that.

Big eyes makes us like characters more, it activates our natural fondness that we evolved for protecting babies (one of their main features being big heads and eyes compared to the rest of their body). Animators abuse this simple adaptation.

You could also argue that it's not intentional, but the natural direction artists leaned towards because they themselves fell for this effect.

Did you like by any chance never heard of a term called a MOE ?

Or is this just your poor attempt to start flame war, about "Avatar is a better anime, than actual anime" ?

I would guess it's more appealing to the audience.

This thread is racist. There are people outside Asia who have smaller eyes than Japanese.

Aside from aesthetic appeal it helps to draw out the different expressions and emotions on a character's face if the eyes are more visible.

For the moe. Also, I wouldn't say they don't have 'asian eyes'.

I'm sure there are a lot of anime characters with asian eyes.. it depends on the art style. But a lot of times the characters aren't even from Asia, so why should they? Anyway, don't tell me that kind of chibi-anime eyes are actually real. No one has eyes like that.

AND AVATAR THE LAST AIRBENDER IS A CARTOON, NOT AN ANIME D:

I think the reason why a most anime characters have big eyes is to express their emotions more clearly to the audience.

It depends on the art style. No one really has gigantic circles as eyes in real life.

Because it's art (whether "low" or "high" art is your opinion). Think, as a manga artist would you rather design a group of ethnically homogenous character or something like this:

Well your answers irrelevant. Point is animation and comic books aren't restricted to the realistic and some artists like to take advantage of that. Which is why a good degree of anime/manga characters not only do not look like ethnic Japanese people, but people/humans in general.

I've always believed anime characters are naturalized japanese citizens. (Caucasians who are ethnically not japanese but adopted japanese names and speak the language.)

Have you noticed that background characters (ethnic japanese are the majority) all look the same? I believe it's because the main characters (a minority in that anime world) are not like the rest of the background characters, IE not asian. For example, take one of my favorite series, Danganronpa, and google Sonia Nevermind. She's European but doesn't ethnically look any different from the rest of the SDR2 cast.

Seems like a common fantasy imo. Some want immortality, some want to fly, some want larger eyes.

Not all asians look like that. I cant speak for all east asians but as someone who is ethnically Hong Kongnese, not a lot of us have small slanted eyes. Our eyes are about the same size as westerners. Also, larger eyes is something that is considered to be more attractive among a lot of east asian people so theres that.
