I've watched anime since I was about 11 years old... The first anime I ever saw and was aware it was anime was 3x3 Eyes... talk about starting off hardcore...
In the 90s and 00s I watched it day and night, but stopped when I went to uni. Recently though, I started watching the odd one or two here and there again. I try to seek out unique storylines in anime; finding the creators with new stories to tell rather than the same ones telling the same story again and again with different characters - long time anime fans know what I mean by this!

Big long anime series are daunting though, I agree. Rurouni Kenshin is a very long one at 90-odd episodes but there are longer ones! Naruto for example lol... It's well worth it though - the Samurai X OVA (basically a prequel to Kenshin) is really quite moving and pretty graphic too.
Man, that is a looooooooong slog. I've done SKET Dance (77), Fullmetal Alchemist: Brotherhood (64), am working through Soul Eater (51) and have done some other long multi-season shows but that is a big one. Still, every time I think about starting something of that size and dread it, once I start watching I just can't stop and am sad when it ends lol
Not too sure what to recommend to someone as jaded as yourself, especially after recommending Amnesia, hands down the worst anime I've ever seen. I really, really enjoyed Hataraku Maou-sama last season. It's about Satan working in McDonalds and is extremely funny.
