I like to listen to soundtrack, be it from animes or movies, so I thought about sharing which I like, since I also like to hear what you here listen to and try that. =)
That means if you do listen to some OST, as not all soundtrack is made so that you can listen to it without the anime/movie.
It would be nice if you could say something about the style of the music, then it would be easier to decide for the others if they should give it a try.
I think we don't need to make this topic about animes only, so I will include movie soundtrack I like as well. ^^

Anime Ost I listen to:
House of five leaves; it's rather slow and inspired by traditional japanese music (I'd say, as far as I can tell..)
Fairy Tail; if you like folk rock you should give this a try
Book of Bantorra; classical like music, sometimes with choir
Noir; it resembles something typical french, with accordion e.g.
Movie Ost I like:
Amelie; light french like music with accordion
Pirates of the Caribbean and Lord of the Rings: classical like music
I love fairy tail too and Bleach OST also some from .hack//Sign, Scryed, one from Clannad
From movies I liked Juno, Braveheart, 12 monkeys, secret of roan innish, Lord of the rings, there's one or two I'm forgetting...oh well.
Those series have really managed to create some consistent earworms in my head, even at the most random times! I just mentioned Cardcaptor Sakura, and already one of the tracks is stuck in my head!
As for movies, the only one I can really think of right now is the Titanic movie. I really love a lot of the music in that, too. I like a lot of classical background music, or jazz kind of music, like stuff you would hear on the Weather Channel. ^^; There's a reason why it's one of my favorite channels...!!
Okay, starting with anime OSTs...
There are many anime where I like a couple of songs, but I'm a bit less knowledgeable when it comes to OSTs. But still, here's some kind of list of the best soundtracks overall imo:
Panty and Stocking with Garterbelt - damn, that's the best collection of electronic music I've ever heard in an anime; it's powerful and crazy, just like the anime.
Ghost in the Shell: Stand Alone Complex - one hell of a soundtrack, Yoko Kanno knows how to make music, the album's some sort of techno-rock fusion; btw, one of my favourite anime songs, hauntingly beautiful Inner Universe performed by Origa, is on this album.
Umineko no Naku Koro ni - the VN is famous for its great music and while anime may have not picked the very best music from it, it's still got one helluva OST; it's pretty different from most anime soundtracks, somewhat sombre and haunting, yet vigorous (I mean, just take this for example, or this; and then there's this crazy shit as well). I expect Phantom of the Opera to pop out from somewhere all the time ^_^' There are calmer and more optimistic pieces too. The OP and ED are special stories, so I won't even begin with that.
Fairy Tail - awesome synthesis of Celtic music with rock
Shiki - made by Yasuharu Takanashi, the very same guy who worked on fairy Tail's music. But this OST is different and shows that Takanashi's biggest talent lies in composing horror anime OSTs (he also did Jigoku Shoujo's). The music contributes a lot to setting the right, i.e. compelling, atmosphere for this anime. Don't take my word though, hear for yourself -Pendulum or Muddy Water
Wolf's Rain - another Yoko Kanno's creation (did I mention I have her in my favourites ^_^), it's a great example of diversity we've all come to expect from Yoko
Hellsing Ultimate - quirky, energizing, kinda techno-oriented (some would say repetitive, I know); two tracks that are somewhat different from the rest happen to be my favourite - Gradus Vita- dayum, it's epic as in 'Carmina Burana' sense of epic; and solemn Marche Funebre
Haibane Renmei - I just had to include this little work of art. The OST consists mostly of chamber music; it seems quite simple at first listening but somehow it feels there's more to it than meets the eye (ehm, the ear in this case); it is not stunning but it's beautiful and soothing; does a great job in supporting and even furthering the plot of the anime.

I'm not very much into movie OSTs but some that managed to draw my attention and consequently made me like them a lot are:
Godfather - ever since I heard this song I fell in love with it even though I didn't even know its name (LOL, this sounds like a beginning of a corny love story as the song title would suggest xD). Nothing more to say, except that i friggin LOVE this OST
Requiem for a dream - couldn't omit this one (I mean, who hasn't heard Lux Aeterna, even Mozart approves of this =)); from a movie like this you'd expect a memorable OST and that's exactly what it is; haunting like no other, I frigging love this thing
Moulin Rouge - it's a great musical, and fortunately one with a great OST as well
Dangerous Minds - two words - Gangsta's paradise <3
There sure are more great OSTs, but my memory's failing me atm.
May as well list a few of my faves, with video evidence!
Movies - Don't really have that many movie soundtracks actually, although I generally try to hunt down anything by Clint Mansell. He's done the soundtracks for The Fountain, Requiem for a Dream, Pi, Moon, The Wrestler and Black Swan and has done a fantastic job on all of them, making some pretty incredible music which sounds great on its own and fits the themes of the films extremely well.
I'm also rather impressed by the soundtrack to the film Stay, the TV series Twin Peaks (which is one of my all time favourite shows) and the Lord of the Rings series, by Asche & Spencer, Angelo Badalementi and Howard Shore respectively. Bear McCreary also comes to mind in this field for his work on Battlestar Galactica and The Walking Dead
Anime - A few composers really stand out here. Yuki Kajiura comes to mind immediately, with such works as Kara no Kyoukai, Puella Magi Madoka Magica, Le Portrait de Petit Cossette and a whole ton of other stuff, plus her involvement in Kalafina, See-Saw and FictionJunction.
There's also Yoko Kanno, well known for her contributions to Cowboy Bebop, Ghost in the Shell and various other shows such as Darker Than Black and Wolf's Rain. She's done some impressive stuff over the years, all of which are well known and loved. There's also some impressive work out there by Hideki Taniuchi, known for his work on Kaiji and Death Note and Koh Otani for his involvement with Shakugan no Shana and Haibane Renmei. Yasuharu Takanashi also deserves a mention for his work in Heartcatch PreCure!, Suite PreCure and Mononoke, amongst other things. The team who worked on the Panty & Stocking OST certainly deserves a mention too.
Games - Once again, Koh Otani comes to mind here, notable for his work on Shadow of the Colossus, and I'm a huge fan of Akira Yamaoka's work on the Silent Hill series and Shoji Meguro's work on the Shin Megami Tensei series. Frank Klepacki's involvement with the Command & Conquer series and Universe at War is also much appreciated and the soundtracks fit well with the games, same with Daisuke Ishiwatari and his works for Guilty Gear and Blazblue.
Also, Anamanaguchi and Souleye have provided some fantastic soundtracks for Scott Pilgrim and VVVVVVV respectively, plus the teams working on the Unreal Tournament and Okami soundtracks have put out some respectable work. Also, Aperture Science Psychoacoustics Laboratory.

I recall listening to the sound track for Apocalyse Now in the hall way in high school with some friends. (this was the late 70s and the film was still recent). We liked the part where chef is returning from looking for some mangos off of the boat and gets startled by a Bengal tiger.

While not technically anime, currently I am a big fan of Hatsune Miku.
At least I can go see her in concert.
I can't think of all of them right now but here are a few. I'll start with video games since there aren't that many.
Game Soundtracks
Final Fantasy IX soundtrack: my favorite game in the series, I absolutely love the soundtrack. I could point out individual songs that I like but as a whole it's lovely and the songs are perfectly placed throughout the game.
Gears of War OST: Not the biggest gearhead but the soundtrack is awesome. Love the orchestra and the epicness the sounds as you slaughter some drones. X3
Eternal Sonata soundtrack: I'm not the biggest fan of classical music but playing this got me liking a lot of the Chopin the was played as you went through the game.
Anime Soundtracks
Beck Mongolian Soundtrack: I love the songs in this and how they take influence from bands in the States like Rage against the Machines and Led Zeppelin. Also any anime that has a cover of a Beatle's song scores brownie point with me.
Nana: Another anime revolved around rock music and female vocalists at that. Combing two of my faves makes it win in the soundtrack department.
FLCL: The Pillows, what's more to say?
Full Moon wo Sagashite: Very bouncy pop music that makes me want to dance l((^o^)/
Azumanga Daioh: The Kuri Coder Pop Orchestra is good with this one and so much feel comes with every song. Always look forward to the New School Term. ^^
Fruits Basket: Ritsuko Okasaki's voice fit wonderfully with the happy and sad melodies you'd get out of the soundtrack. I always feel a hint of sadness when I hear A Small Prayer.
As now reading through here I remember OST's I wanted to get (like Madoka and Shiki). o.o

I didn't know that she did the Madoka OST as well, no wonder I liked and wanted to dl it.
And I forgot Le Portrait de Petit Cossette, I really like that one too. (She did the OST for Noir too.)

One song from Tokyo Majin Gakuen Kenpucho: Tou. The original song is 'winter' of the 'four seasons' by Vivaldi ^^ I haven't listened to the rest of Toyko Majin OST, but I could listen to this song forever ♥
Regarding Zetsubo Sensei, I listen to some song but to be honest I'm not sure if those are openings/endings or OST :P yet there is one piece (in piano and violin) that I like a lot:

@Hel: Yeah, I think soundscape to ardor is my favorite. I found a techno remix, but I like the original better. The remix is pretty good too. Just found another remix.
Monsoon Wedding is a really great romantic movie. I'd def recommend it.

I liked Tsubasa, and Pandora hearts. I was planning to post some .hack//Sign tracks, but you beat me to it. I like that one a lot and also these: (Man! listening to these makes me want to watch this show again. I think I'm going to watch .hack//roots and some other stuff first)
Some of these songs start of slow, but then get good after the first minute or two so be patient or skip ahead if you don't like the beginning

They always play that song during the very emotional scenes and it always makes you want to cry. It's almost manipulative the way they tug at your heartstrings; they're very good at it.
My all time favourite OST is from Ghost in the Shell - Innocence. I like Kenji Kawai's music so much i put him in my favourites.
The genre is a reinterpretation of traditional Japanese music besides "The Doll House" which reminds of magic box sounds. Please listen to it with good speakers instead of headphones if possible. I also suggest dim light.

Yeah Bantorra OST has some beautiful tracks, it's like listening to a symphony or an opera. My favourites are People in Misfortune, Magic, Hamyuts and Destiny of Assassin.
there are so many movies with excellent soundtracks.. but unfortunately i cant think of any at the top of my head. but i do remember daft punk made the whole OST for the tron: legacy movie. and its DAFT PUNK!! so of course it was nothing less than amazing! :D
The main theme of GSG - Il Teatrino is just magical. Ko Otani is such a genius, he also wrote the best videogame soundtrack ever, for the Shadow of the Colossus.

I don't think it was used in the anime, but it's still on the Shiki OP 2 CD. Well, it's not totally uncommon to have songs on OST that haven't been used in an anime.

Being bored, I started to think, which are my favorite composers working in anime industry. Decided to limit the list to seven (my lucky number) names, and the example songs had to be from anime OSTs.
