Hello everyone, I would like to hear some recommendations on anime or manga (preferably) about parenthood or raising children!
Similar to Usagi Drop, but well... without what happens afterwards.
Something heartwarming and sweet, I don't mind a little sad either.
Have a great day.

Don't get fooled by the cover, it's exactly what you are looking for: heartwarming, sweet and a little sad.
Kind of similar to Usagi Drop in regard of the main character raising a child that isn't their own.

If you're interested in shows about parenthood that don't go in any problematic directions, then I recommend the following shows:

https://myanimelist.net/anime/51705/Otonari_ni_Ginga Otonari ni Ginga - It's basically a fantasy about a wholesome relationship between a girl and a single "dad" who raises his younger siblings.
https://myanimelist.net/anime/50265/Spy_x_Family Spy x Family - The spy warms up to the fake family he created for the mission. This is a spy action, but quite wholesome and comedic so as not to expect edgy and too dark content.
https://myanimelist.net/anime/53411/Buddy_Daddies Buddy Daddies - Two killers are raising the little daughter of the criminal they killed. At the same time more action-ish and wholesome than the previous one, but the violence is shown more boldly. Also, the vibes of a same-sex family with children, although only metaphorically.
https://myanimelist.net/anime/40716/Kakushigoto Kakushigoto - a wholesome comedy about how a father tries to raise his daughter by hiding his work on an adult manga from her.
https://myanimelist.net/anime/32828/Amaama_to_Inazuma Amaama to Inazuma - a high school student helps her teacher, a single father, cope with raising his daughter after the death of her mother.
https://myanimelist.net/anime/102/Aishiteruze_Baby%E2%98%85%E2%98%85 Aishiteruze Baby★★ - Caring for a little relative teaches a playboy about responsibility and a caring attitude towards women
https://myanimelist.net/anime/1485/Akachan_to_Boku Akachan to Boku - A father and his sons of different ages try to cope with the loss of their wife and mother. It's pretty wholesome, but it's old shoujo, so I warn you in advance about heavy doses of melodrama and hints of shotas.

In general, I tried to mention shows that explore specifically the parenting and raising children instead of just temporary care for some reason in the style of shows about involuntary nannies. But if just caring for children is also interesting to you, let me know.

+1 recommendation for Sweetness & Lightning (https://myanimelist.net/anime/32828/Amaama_to_Inazuma) - single dad trying his best to raise his daughter after his wife passes away. Really sweet.

Also Hinamatsuri (https://myanimelist.net/anime/36296/Hinamatsuri_TV) may also fit what you are looking for.
