Music taste is extremely subjective (and brings a lot of people to war to death), so I'll try to answer the best of my ability.

Although I would say that the anime is really bad, xxxHOLiC as a unique OST to me.

Durarara!! is a must to me in terms of music - not only the openings and endings but the OST

Even if School Rumble's OST isn't WOW, the opening is quite memorable although I don't know if it's "good music"

Natsuyuki Rendezvous More for relaxing music

Wolf's rain OST but also the opening just take your breath away

Guilty crown, sword art online and attack on Titan are the first to come to mind. Because those have awesome soundtracks, even if they might not be... The best shows to some people. I love all of them in a way, even though I think only one is actually... Good IMO.

+1 to this. Yuki Kajiura is a masterful composer.

Also I'd like to add to work of Jun Maeda on the OST's of Clannad and Angel Beats.

Katekyo Hitman Reborn! has great OPs and endings, i watched it about 2 years ago, and i still remember most of the OPs and endings.

Perhaps my favorite score comes from one of my favorite animes, Dennou Coil. Saito Tsuneyoshi uses a remarkable mix of instrumentation, especially woodwinds and percussion. The score also ranges widely across musical genres and moods.

If you like jazz, I'll suggest three scores: Oh! Edo Rocket by Honma Yusuke, Bartender by Ootake Kaoruku, and Kids on the Slope by Kanno Yoko.

Rocket also ranges across genres including a wonderful piece for Flamenco guitar, but the dominant themes all derive from the 1940's American "big-band" styles, the music of the American occupation after World War II.

Bartender consists mostly of pieces for solo piano or small combo; you can imagine Ootake sitting in the corner of Bar Eden Hall noodling on her piano.

Kids on the Slope includes a variety of famous jazz performances, beginning with Moanin' by Art Blakey and the Jazz Messengers, but one of my favorite pieces is the improvisation on Hammerstein's "My Favorite Things" from The Sound of Music. I learnt of Yuki Kajiura from Tsubasa Reservoir Chronicle. But I would have to say her best composition is within Kara no Kyoukai.

Listening to the Opening was a reason for me to start watching the movies.
