One Piece isn't for everyone and that is a good thing, I don't think everyone should like One Piece because it exists as a slight Niche within the Anime and Manga community. not everyone is going to like grand adventures on a massive scale and that is okay. different people like different things and that is what makes us people.
One Piece is a massive story with Tolkien-esc detail and Oda has injected so much creativity into his world. Story Beats that were sprinkled within the first few dozen chapters are currently given light time to be analyzed and discovered in the current chapters. at the end of most arcs, you usually have a feeling of "how is this the greatest climax in One Piece, but also how does it feel like there is an Upswing". One Piece is a perpetual motion machine of defining expectations and storytelling and it is a treat reading it weekly and watching things unfold piece by piece. the Art is dense and detailed
if you want to experience One Piece read up until the end of Baratie because I feel at that point, you witness the start of most of the plot threats that push the heart of the series and after Baratie, excluding a few arcs like Long Ring Long Land and maybe Skypia, you are going to be given an absolute treat that cannot be matched.
