First off, I disagree with all the people who simply rated this show 1-3 based on the fact that there was not character development after watching 175 episodes... The fact of the matter is that the show got them to watch those episodes, did it not? In that way it succeeded. People don't watch "okay" tv shows that go on forever because of their fantastic and visionary story... They watch it because it's enjoyable (which is what this anime is all about).
Fairy Tail is a frustratingly inconsistent show. The show sometimes develops fantastic stories, and sometimes the plots are extremely shallow or even nonexistent. Sometimes

there are beautiful character backgrounds or relationship developments, but then sometimes they get thrown away and replaced with very repetitive character interaction. Almost always the pacing of the anime is really good, but I distinctly recall a part around ep. 40 or so when all of a sudden the direction of the anime must have changed or something, because all the dialogue and action felt really slow and disjointed.
Nonetheless, the consistent part of this show is its ability to drag you back and continue watching. Usually the story arcs are very interesting (with a couple key exceptions), and the anime has several key threads running always that develop slowly yet steadily, making you hungry for more information. Even though the theme - of the main characters just being pushed to the limit and getting stronger every time - just occurs over and over again, watching Natsu beat up more and more people doesn't really cease to be enjoyable (at least in my opinion).
What makes it all the better is when the story gets good, it really gets good. I particularly remember some really OMG moments as everything that I thought about the show was blown away when it took a turn in a direction I could have never expected.
At the same time, I enjoyed how this anime was fine with having fun with itself. Characters sometimes broke the fourth wall, referred to past events with irony, provided plenty of fanservice (at least plenty of female, some male as well), and joked in a very amusing way. It was a very good action-comedy in this sense.
All in all, don't go in looking for perfection. This isn't one of those superbly well thought out animes - if you're looking for that, I'd recommend Steins;gate or Code Geass or FullMetal Alchemist Brotherhood, or something along those lines. But Fairy Tail will provide you with hours (and hours and hours) of entertainment, so give it a try!
