Ahh, so Fate. There's like a tonn of different 'Fate's out there, but you don't need to watch, like, all of them. The main 'Fate Four', as I like to call them, are
1. Fate/ staynight (2006)
2. Fate/ staynight: Unlimited Blade Works
3. Fate/ staynight: Heaven's Feel
4. Fate/ Zero

There's two main watch orders. Either you go-
Fate/Zero> UBW > HF (and completely skip 2006 like most people do)

OR
Fate 2006> UBW> HF> Zero. This is the release order of the original source material (Visual Novel/ Light Novel).


Some background info on Fate. So Fate/staynight was a Visual Novel. Visual Novels are essentially like the choice based games you play with routes and stuff. Choices you make impact the ending kinda thing.
Fate/staynight had 3 routes you could end up on, depending upon your choices early on in the game. All three 'staynight' installments are basically a story with the SAME beginning, but drastically different outcomes.
Fate/Zero was a light lovel that came out AFTER Fate/staynight. It is a prequel set 10 years before the events of staynight. So people who prefer the 'chronological' order recommend watching Zero first because it happened first. Whichever watch order you follow, you'll end up spoiling yourself. Once you're done with all four of them, you'll get the big picture.


Personally, I followed and recommend this watch order:
Fate 2006> Zero> Unlimited Bladeworks> Heaven's Feel.

This watch order has better animation with each sequel, and makes for a wonderful ufotable experience, without spoiling a lot. Go for it!


Couple of Heads up:
•Fate 2006 had 'old 2000s' animation that can put people off. I still recommend watching it because the music is AMAZING.
•Unlimited Blade Works exists in two forms, a movie and a full series. WATCH THE SERIES ONLY.
•Make sure that Heaven's Feel is the last thing you watch from Fate. Nothing comes close as a grand finale.
