I want to watch all anime I've ever started and everything related to them. However, this sometimes proves to be an impossible task because some of them seem to be lost media. Anyway, I'll keep looking for them!
My favorite genres are: Sports, Adventure, Fantasy, Music, History and Drama.
I used to watch anime on TV when I was a kid, then started watching subbed anime with Naruto back in 2007, but didn't really try to watch anything that wasn't sports/battle shounen until 2017. Boruto was the anime that made me enjoy other genres, so it is very special to me. Nowadays, I watch pretty much every kind of anime, but I dislike Ecchi and I'm not interested in things with explicit themes.

Previously I manually scoured my MAL lists for the stuff what I was missing and that was pure hell, and then I found chiaki.site and that searches my list and automatically says what I've missed from a series, they're great tools, and it would be a nightmare without it.
You're right, you shouldn't rush things, watching anime is your free time and you should enjoy it. If it feels like work, then that's not good at all.
What? Really? You know what, I'm actually on an anime project right now, where I watch everything related to already watched animes that I have missed previously, and that is exactly what I am thinking. I started with 1000 animes in my plan to watch section, and now I'm down to below 600. I'm also a perfectionist, so that is one reason why I want to watch everything relating to an anime that I've already watched.
