Its much more interessting to see how he grow up

The reason is pretty simple. Give the Protagonist just a special ability like Solar Hands, friends who backup him and many enemies.(of course only bread baking) Then you have an Anime who's about Bread and makes fun watching. Yakitate!! Japan is not the best Anime you'll see but it will give you 69 episodes fun and tension.
