For movies using real actors I would definetly pick subtitles, as the actors take into account the pace, the intention etc in their work as professionnals and I don't think someone dubbing can completely grasp them. Even if they do, they might not be able to completely mirror these intentions.
However, even in their original languages, animes are dubbed. So my preferance between sub and dub really depends on quality. And for Ghibli movies both are very good.

I'd always prefer sub. However, Studio Ghibli movies that are dubbed are not so bad.

I like dubs better just cuz it is hard for me to read the subtitles and watch the film at the same time. Saying that, sometimes when I really get into a subbed anime, It's like i'm not even reading the subtitles and the characters are speaking in English? Does anyone else get that!?

For me dub is the best... for Studio Ghibli movies. Nearly all the studio ghibli movies that I have access to are from the library, which have them already set the the English dub. I didn’t even find out until recently that you could actually change it to the Japanese. I really really don’t feel comfortable watching it in any other language* just for that nostalgia feeling of watching it when I was younger.

*my dad got access to the Chinese dub once but I really really hated it

I used to watch dub as a kid, but now when I'm re-watching something from Studio Ghibli its usually sub.

It really depends on the quality of both. I prefer starting in Sub and then watching again in Dub so I can get both perspectives.
For example, I find Porco Roso way better in dub vs sub, while I prefer Princess Mononoke in sub over dub
