...is it as dark and thought-provoking as people say? FMA, for example, isn't as dark or thought-provoking to me as Parasyte, Shinsekai Yori, Elfen Lied, etc. was

Just wondering if it's worth it to watch!

And if not, any recommendations that would fit what I'm looking for? My anime list is updated! (Please, please don't recommend Death Note or Monster)

not as dark as shinsekjai yori parasyte or elfen lied, but in comperison to other shounen yeah...
but the first 4 eps will scare you because they are light hearted... soo light hearted and somewhen later it gets darker

The chimera ant arc is the one people speak of when they say hunter x hunter is dark. But still it seems you are looking for an anime much darker then hunter x hunter. While it does have emotional dark moments and overall I highly recommended it...you seem to want something a bit more mature and dark.

Yes, I definitely am looking for something more mature and dark.

But I am going to try Hunter x Hunter based on what everyone is saying here so far!
