"High fantasy elements" would probably be more what you're looking for, I think.

Kind of hard to find that in anime, as it isn't really a Japanese thing. I honestly can't think of any, but good luck.

Try Tower of Druaga - the Aegis of Uruk
It's a very funny fantasy comedy.

Record of Lodoss War (and all related series). The stereotypical RPG-like anime. Elves, dark elves, dwarves, etc, etc.

There's a couple of Lodoss series, and Lodoss was based on D&D iIrc. Also several manga of it.

Then you have Berserk of course. The anime doesn't feature that many zombies, elves and dragons, but that picks up in the manga, and judging from the most recent chapter, it will likely be even more packed with magic creatures from now.

Here are a few suggestions:

Shining Tears X Wind: The anime adaptation of the two-part game series. Not just that there are elves in the team, there is even a draconian who were original team members of the first team led by Xion.

Star Ocean EX: Not sure if you could call the team members are elves but they do resemble the legendary race. And there are most likely dragons too.

.hack/sign is RPG themed, but I felt that the entire focus of the anime is on the characters and the mystery. I dunno, you might like it.

I think .hack/Legend of the Twilight would a be better choice if you're looking for action, although I felt that the characters were mostly underdeveloped.

The entire setting of Escaflowne is in a fantasy world with strange creatures and beings etc. (no leveling though =P)

Final Fantasy VII: Advent Children? I dunno, different type of RPG—just throwing it out there.

Can't believe no one has mentioned Guin Saga yet. It's based on the book series by the same name. It's kind of Japan's version of Lord of the Rings. Definitely worth checking out.

A lot of other suggestions were very good too, such as Scrapped Princess and Escaflowne.

Second. Of course I could be mistaken, given that I only saw a few episodes, but everything about the show oozed high fantasy epicness. And those backgrounds... *drools*

The LODOSS Series!

For more comedy, Ryu Knight (mecha/D&D-ish nature)

There's also Arslan Senki. I can't remember if there's any elves or demihumans. I need to get back into it
