Probably Domestic na Kanojo. The show might not be the best but that first episode is something.
And Sword Art Online had a pretty good first.

Attack on Titan - God-like hook with a superb OST to go along with it.

The Promised Neverland - The reveal was exceptionally done, and the sudden turn from a gentle, feel-good slice of life anime into a full-on horror/thriller ensured I binged the rest of the series in one visit.

Probably The Aquatope on White Sand / Shiroi Suna no Aquatope. It's such a whimsical, warm episode, especially with setting up Fuuka's character and how she ended up at the aquarium. I still remember how I was blown away by the aquarium scene, it was so beautiful.

It's very hard to compare the experiences of watching an anime for the first time. I feel like I'm biased towards the recend years and the ones where I had to wait a week for the next episode, because I can remember them more clearly.
