title says it all, one were u finish it and thats the only thing you can think about for like the next day. something like code geass ending were everything comes together.

Samurai champloo - at first it focuses on the adventure of the 3 main characters but the last couple of episodes will leave you in shock of how quickly the mood changes from adult humor to a gripping and crazy story.

Tengen Toppa Gurren Lagann - this show is the definition of EPIC! enough said really lol.

ya already saw guilty crown a liked it.
um as for plot i like a more serous tone with romance and maybe some action.
and plot progression is very important i hate anime were nothing really happens and everything stays the same, i love twists.

Does it have to be an action?
If not then;
Cannad and it's sequel
Fullmetal Alchemist: Brotherhood (this one is action)
Gosick ( A mystery,drama, action set before WW2)
Higurashi no Naku Koro ni Kai(sequel to higurashi, the answer arc is what people call it)
Kokoro Connect (this one can play with your mind a little bit)
Suzumiya Haruhi no Shoushitsu(this one can be a bit confusing as there are different orders to watch it)
Tengen Toppa Gurren Lagann (Silly action mecha but it's a fun watch)
Toradora! (slice of life comedy)

Oh, and this of course. This is similar to Code Geass, the difference is just that everything is on a higher scale in Legend of the Galactic Heroes.

Kurozuka (this is the anime for you! This anime is a thinker and towards the end everything comes together! It's awesome it has romance/action/ and it's dark)

Saiyuki - based on an epic (literally) it's based on the epic "Journey to the West"

Gungrave - has one of the best bittersweet endings in anime.

If you don't mind a manga, Pandora Hearts has all the twists you want and more. There's an anime as well, but it ended at a time during which the manga wasn't that far ahead, so it ends differently. The manga is still ongoing.
