My professor teaches a class connecting different cultures ghost stories and monsters to modern society and asked me and my friend for a manga that did something similar, or at least had the subject matter. Any ideas?

Ayakashi: Japanese Classic Horror - traditional Japanese ghost stories (only an anime, though)
Aoi Bungaku - Horror stories that were written in Japan (again, not a manga)

Tactics and Natsume Yuujinchou is what you need.

I think that the main point of your ghost manga should be that it can be used for education. Well, in Tactics and Natsume, every ghost that poops out is described nicely.

Also, I'd second Nurarihyon, since many ghosts are explained there, too.

And, scrap Mushishi. Mushishi is great, watch it in your free time, but it is 100% fiction, it has little to none to do with actual ghost stories. It's made up, maybe based on legends, but it doesn't tell the legends as they are.
